How to cook Filipino Maja Blanca with Mais Recipe.
Maja Blanca Recipe The original Maja Blanca recipe has no sweet corn kernels. But this one has it just to add texture and the milk makes it more creamier. Maja Blanca Mais is a coconut cake cooked with sweet corn kernels over a stove-top and thickened with cornstarch. One of the easiest recipes on Filipino desserts, try it.
Maja Blanca Ingredients:
- 2 cups coconut milk
- 1/3 cup cornstarch
- 1 tsp. condensed milk
- 1/3 cup fresh milk
- 1/3 cup granulated sugar
- 1/2 cup whole sweet kernel corn
- Latik, honey crumbled corn flakes or toasted grated coconut, for garnish
Cooking Instructions:
- Pour the coconut milk in a sauce pan and bring to a boil. Add the sugar, condensed milk, and whole sweet kernel corn then stir until all the ingredients diluted. Simmer for about 10 min. on a low fire and keep stirring. Combine the fresh milk and cornstarch then whisk until the cornstarch is diluted.
- Pour the fresh milk and cornstarch mixture in a sauce pan and stir thoroughly. When the mixture reaches a thick consistency its already done. Pour the mixture in a 5×5 plastic container then slowly tap the container on the flat surface to flatten the mixture. And if using a silicon or non-stick 12-cup mini muffin pan fill each cup full. Let it cool then refrigerate for at least 30 minutes or until set. Garnish with your desired toppings (latik, toasted coconut or honey crumbled corn flakes) and serve.
