Banana leaves are large, flexible, and waterproof. They are often used as ecologically friendly disposable food containers, wrappers or as “plates” and often used in Asian cuisine to wrap for or line trays before cooking, much as waxed paper or aluminium foil are. The leaves contain the juices, to protect food from burning and add a subtle fragrance and flavour to the food. They are sold in rectangular sheets, particularly in local markets.
Banana leaves should be passed over an open flame for a few seconds and be careful not to scorch them or you can blanched them for about 15 seconds before use to soften them, so they do not crack when folded. Â
